Mary’s Swedish Pie

Mary’s Swedish Pie

Ingredients

3 to 4 Apples peeled and medium sliced

1 TBSP Sugar
1 TBSP cinnamon

¾ cup melted margarine or butter
1 cup Flour
1 cup Sugar
1 Egg beaten
1 pinch of salt
½ cup nuts optional

Directions

Peel and Slice Apples enough to fill pie pan 2/3 full. Set aside.
Mix together sugar and cinnamon. Sprinkle over apples.
Mix together the butter and egg.
Mix together flour, sugar, salt nuts.
Combine the butter/egg mixture with the dry ingredient mixture. Pour over apples.
Bake at 350 degrees for about 45 minutes until golden brown on top.
This pie will make its own top and bottom crust.
Best served warm with vanilla ice cream. About four servings.

Hermine brings in September

September is here and summer season is wrapping up in a series of Storms and Hurricanes which is much like life.  We all go through trials and tribulations which either strengthen or weaken us. Often times when I find life becoming out of my control, I go into the kitchen and start cooking or baking. I have found it calms me. I also love the satisfaction of watching others bask in the delights of what I have cooked.

I love the fall cooking season as it brings many earthy types of foods. Foods that many people find comfort and joy in the changing seasons. I will share a recipe today with you that brings back memories for me of life on my paternal Grandparents farm which was a simple but tranquil place.
